Recipe Notes
  1. Cut acorn squash in half lengthwise and scoop out seeds.  Place in a shallow pan with approx. 1/2" of water in pan.  Place squash in pan with cut sides down.  Bake for 45-50 minutes at 350 degrees.
  2. Mix up remaining ingredients in a bowl and divide it up between all four "pies".
  3. Bake for 15-20 minutes.
  4. Serve warm plain or with whipped topping.
